Gluten Free Crayfish and King Prawn Risotto

Gluten Free Crayfish and King Prawn Risotto is a simple and tasty dish for seafood lovers!

 

Preparation time- 5 minutes

Cooking time- 15 minutes

 

Ingredients;

  • 300g Risotto Rice
  • 1x Pack of fresh Crayfish
  • 1x Pack of Fresh King Prawns
  • 700ml of Fish stock (Knorr fish stock pots)
  • 1/2 cup of Garden Peas
  • 2 tbs olive oil
  • 1x small onion (finely chopped)

 

Method:

Place the onion and the olive oil into a microwavable bowl, give it a stir to ensure the oil is covering all the onion in the bowl. Cook in the microwave for approximately 3 minutes keep checking and stirring occasionally to make sure the onions do not burn. Add the    un-cooked risotto rice into the bowl (weird I know but trust me its good) then add the ready make fish stock- made by putting the fish stock into a jug and adding 700ml of boiling water to it and mix thoroughly until the stock has dissolved into the water. Put the bowl back into the microwave and cook for a further 3-4 minutes. Once this is done transfer the ingredients into a large frying pan, add the peas, crayfish and king prawns, cover with a lid and simmer gently until the risotto rice a thoroughly cooked.

Season with salt and pepper. This is a lovely naturally gluten free dish that is easy to make and delicious to eat, enjoy!!
